Recipe: Stuffed tropical sweet potatos (boniato)

This recipe is a variation to the stuffed potato (papa rellena) which is fried. We are using tropical sweet potato because of the health benefits and the complex carbohydrate content as opposed to potatos and using an air fryer. What is a boniato? What is an air fryer?
What is a Boniato?
The boniato is one of the least known tubers and in the family of the sweet potato. It is a little less fibrous compared to the sweet potato. The flavor is milder than the sweet potato therefore it goes well with savory dishes. It has a high vitamin C content with 25% RDA in just 4 ounces.
The boniato is typically eaten fried, boiled and in this case, mashed.
We are replacing the ground beef with lean ground turkey.

Stuffed tropical sweet potatoes: 3 lbs whole boniato 2 lbs of ground turkey or vegan alternative 2/3 yellow onions, diced 2 whole green peppers, chopped 5 garlic cloves, minced 1 teaspoon of ground cumin 2 teaspoon of salt 4 teaspoons of tomato paste 1 teaspoon ground pepper 2 tablespoons of olive oil 6 whole eggs 1 cup of bread crumbs (substitute with gluten free bread crumbs) 1/2 cup of flour
Mashed Boniato: Place washed, and cleaned boniato in 5 quart pot at medium high. Boil until skin comes off with a spoon. Rinse water until the boniatos are cool enough to handle. Hand peel skin, and cut off fibrous end tips, place in water and set boil again.

Boil until fork goes easily in. Same as you would mashed potato. Mash completely then place contents in a seal-able container after cooling and place in the freezer for 30 minutes.
Ground Turkey:

Pour olive oil in a skillet pan on low heat. Once simmering, add cumin, garlic and pepper and let simmer, followed by the tomato paste, cooking wine, stirring until liquefied. Add the onions and peppers and place a cover on low heat. Cook until onions are translucent. One a separate pot place turkey and 4 ounces of water and 2 ounces of cooking wine. Once water begins steaming, stir turkey until the consistency is even. Add contents from skillet pan and stir vigorously. Cover and place on medium heat stirring every few minutes.
Preparation: Remove the mashed sweet potato from the freezer. Grab 3 oz of the mashed sweet potato and lightly rollinto balls. Keeping your hands humid with water in between.
Place the pieces in a sealable plastic container and place in the freezer for 30 minutes.

Roll all the sweet potato balls in the flour placing them back in the container as they are coated.
Once completed, bathe the balls in the egg batter again, placing them in the container.
Proceed to coat all the balls in the bread crumbs evenly coating them. (Do not let the bread crumbs get wet with eggs.
