Quinoa con Pollo (chicken with Quinoa)

Chicken with Quinoa

Traditional Chicken with rice is a recipe done with slight differences but always the same base seasonings and preparation. Because we can vary the rice with Quinoa and the whole chicken with skinless chicken thigh chunks, we remove a good amount of the simple carbs and chicen fat. Our chicken preparation using the air fryer featured last week will improve on the health aspects and pronounce a more protein-rich and complex carbohydrate based diet with way fewerr calories, and as is important, not remove from the flavor and enjoyment.

Ingredients:

Quinoa:

2 yellow onions - Diced

1 whole green pepper - Diced

8 garlic cloves

2 packets of seasoning for Paella y Arroz con Pollo with Saffron

3 teaspoons of salt

2 teaspoons of Cumin

2 teaspoons of tomato paste

8 pieces of chicken thighs, whole

1 teaspoon of turmeric (yellow coloring is not recommended but can be used)

1 tablespoon of cooking wine

1 Cold Beer, (any, amber beer or lighter) amber

1/2 cup of pitted olives

Grab a plastic bin with sealable lid

add water, 2 teaspoons of salt and one packet of broth seasoning

8 pieces of chicken thighs, whole

Add water until pieces are submerged

Pour 1/2 cup of beer

Store in a container and place in refrigerator for 1-2 hours

Leave aside

Quinoa:

Heat a skillet pan under medium heat

Add olive oil and wait until simmering

Add the cooking wine, cumin, salt, tomato paste ,and stir to dilute the mixture

Add the onions, garlic, and green peppers and cover and let simmer

Once the onions yellow and the quinoa and stir briskly in the pan

Grab one 8 quart pot and place contents of skillet pan into the pot

Pour 1/2 teaspoon of turmeric or yellow coloring into pot

Add water until the quinoa is submerged

Cover and place on low heat stirring occasionally

Remove the chicken from the refrigerator

Remove the skin and extra fat and dispose

Place chicken pieces in air fryer separated to let the hot air circulate completely

Put air fryer at 400F for 40 minutes.

Remove the chicken from the air fryer once cooked

Remove the meat from the bone from all the pieces once cooled or with utensils

Quinoa:

Stir in more water into the quinoa as it absorbs more water through heat

Notice the shells start coming off the quinoa as your stir the water

Add the chicken pieces and stir in more water submerging the quinoa again

Add the olives

Set on medium heat and let water evaporate

Set to serve once the quinoa is tender and the shells have dwindles to tiny strings

The quinoa con pollo must be moist but not runny
